CHICKEN 65 RECIPE
Chicken 65 is one of the most popular snacks and a starter
recipe all across India... It is made using boneless chicken pieces marinated
with some spices and deep fried. I remember having this at Buhari hotel in
Chennai couple years back and the flavours stuck with me forever. Try my recipe
as I try to recreate my food memories of the place and the dish.
There is a Buhari hotel in Chennai. And in 1965 Buhari hotel
made fried chicken, which is now famous in world wide. And that chicken is
called "Chicken 65". The most interesting thing is that, it has a lot
of stories. Some people say, that spices were brought from 65 different
villages, that's why it is “chicken 65”. Or some people even say that, it has
65 different spices, that's why it is “chicken 65”. See the moral of the story
is, whatever story is correct, the dish is great. And there are so many versions of
"Chicken 65", that I have seen.
So, I just thought the "Chicken 65" which I feel
is right, I should make once for sure! So I went to Buhari, which alleged
inventor of "Chicken 65". Learned a bit myself and a bit from them,
and saw what exactly they do. I'll try and recreate the recipe.
CHICKEN 65 RECIPE
Preparation Time: 15 minutes + marination time
Cooking Time: 20 minutes
Serves: 2
Ingredients:
- 400 gm chicken, cut in cubes
- ½ cup yogurt
- 1 tbsp ginger garlic paste
- 1 tbsp curry leaves, chopped
- Black pepper powder to taste
- 1 tsp Roasted cumin powder
- Salt to taste
- 2 tsp Degi red chilli powder / Kashmiri Red chili Powder
- 2-3 tbsp rice flour
- Oil to deep fry
For Tempering
- 1 tbsp oil
- 2 green chillies, slit
- 1 tbsp garlic, chopped
- 10-12 curry leaves
- Black pepper powder to taste
Process :-
• Add chicken cubes, yogurt, ginger garlic paste, curry
leaves, black pepper powder, cumin powder, salt and red chilli powder.
• Mix and coat the chicken well, set aside to marinate for
minimum 30 minutes.
• After margination, now add rice flour and mix well.
• Heat oil in a kadhai(pan) and deep fry the chicken until
crisp.
• Drain on an absorbent paper and set aside.
• For tempering heat oil in a pan, add green chillies,
garlic and curry leaves, sauté till fragrant.
• Add the fried chicken and toss well. Add black pepper
powder and toss well.
Serve hot.
